Banana Nectarine Cake

Total Time: 1 hour | Serves 12

Enjoy this beauty with your evening tea, or any time of the day!

Ingredients:

200G All Purpose Flour
120G Sugar
1 tsp baking powder
1/2 tsp baking Soda
1/2 tsp salt
1 large egg
120ml milk
2 ripe bananas, smoothly mashed
57g melted butter
2-3 Nectarines, cut into thin wedges, seeds removed. (you can use peaches too)

Method:

Preheat oven to 180°C. Coat the baking tin with parchment paper or coat with butter.

Whisk together flour, sugar, baking powder, baking soda, and salt in large bowl.

Beat egg in separate bowl, then whisk in milk, followed by smoothly mashed bananas and melted butter.

Pour banana mixture into flour mixture and mix until nicely combined and smooth.

Pour the batter into the cake tin. Arrange nectarine wedges in a circular pattern, or how you like it. Bake for 40-45 minutes, or until toothpick/skewer inserted in center comes out clean. (When you arrange the nectarine wedges like this before baking, while it bakes the wedges sink into the cake, creating a beautiful flower like shape)

Once the cake is done, take the mold out of the oven, let the cake cool down for about 20-25 mins. Then slowly loosen the edges of the cake and flip it out.
